Plum Chicken

14 to 16 boneless/skinless chicken thighs

1/2 cup soy sauce

1/2 cup plum jam (not preserves)

1/4 cup honey

1/4 cup orange juice

1 or 2 cloves garlic, crushed

Combine all ingredients and pour over the chicken. Bake uncovered in a 350 degree oven for 60 to 75 minutes.

Baste at least once. Use a pan with high enough sides to accommodate all the sauce. Can be served with peas and orzo, with plenty of sauce poured over it.
